Final Transition to New Ownership
Eric Keffer, Partner and VP of Operations, becomes sole owner
In May of 2014, husband and wife team Greg Cole and Beth Fairbairn, founders of the legendary Cole's Chop House, announced the promotion of Eric Keffer to Partner and VP of Operations. Now, just shy of two years later, Eric, who has worked with Greg and Beth for over 14 years and has co-managed Cole's Chop House for 12 of those years (two of which he was one-third partner), will become the sole owner, effective immediately.

We offer our congratulations to Sequoia White, a first year
culinary student at Napa Valley Cooking School at Napa Valley College, who
received the 2015 Cole’s Chop House Culinary Scholarship.
Amber Thoennes, the 2014 scholarship recipient, graduated on
October 30, 2015 and will be working at Penrose in Oakland where she served her
externship. Kudos, Amber!

Husband-and-wife team Greg Cole and Beth Fairbairn have named Eric Keffer a partner and vice president of operations for Cole’s Chop House in downtown Napa. Keffer, who has worked with the restaurant’s founders for over 12 years and has co-managed Cole’s Chop House for nine of those years, will become one-third partner, effective immediately. Jim Gallagher has had the pleasure and luck of working in the Napa
Valley for the last twenty years. He has worked for local chef-owned
and operated restaurants in positions ranging from host, to server, to
line cook, to general manager. Jim then ventured into wine sales,
providing wines to dozens of top restaurants in Napa and Sonoma
Valleys. After several years of sales, Jim received a call from Greg
Cole, chef and owner of Celadon and Cole’s Chop House, both in downtown
Napa. Greg wondered if Jim was tired of having nights and weekends off
and if he would come back to the crazy restaurant business to join his
team at Cole’s Chop House as the Wine Program Director. Jim
enthusiastically accepted and now maintains an award-winning wine list
at one of the most highly-rated steak houses in the Bay Area.
